Ingredients

Mandarin Marmalade

  • 700 grams mandarins
  • 600 grams raw sugar
  • juice 1 lemon
  • zest of 8 mandarins
  • peel from ends of two mandarins

Recipe's preparation

  1. Peel the zest thinly from approx 8 mandarins place in bowl. Slice the ends from 2 mandarins and slice very thinly and add to bowl with zest.
  2. Chop mandarins and add to bowl ensuring that all the white pith has been removed from the fruit otherwise this will make your marmalade bitter. Add 600g raw sugar
  3. Cook for 10 mins, varoma speed, reverse speed 1 with simmering basket on top.

    After this cook check the contents and remove any pips that may have snuck in.

    Cook for a further 30 mins, 100c, reverse speed 2. after this cook check for pips again and give a quick stir.

    Cook for 20 mins, varoma, speed 2 reverse.

    After the final cook test marmalade but putting on a cold dish to see if it sets if not cook for a further 5 mins, 100c, reverse speed 1.

    Enjoy your marmalade.


    You can substitute for any citrus to make a lime. orange or lemon marmalade also.
    You must ensure that all the white pith is removed.
