Ingredients

Lemon Curd & Cream Cheese Scrolls with Vanilla glaze

Dough

  • 350 g bakers flour
  • 1 egg, about 60g
  • 50 g white sugar
  • 5 g dried yeast
  • 5 g fine salt
  • 100 g Milk
  • 90 g thickened cream
  • 20g g milk powder
  • 35 g Chopped butter, 2cm cubes or smaller

Filling:

  • 180 g Lemon curd, premade and chilled
  • 180 g cream cheese

Glaze

  • 150 g white sugar
  • 1 tsp Vanilla Paste
  • 1-2 tbsp Boiling water

Recipe's preparation

  1. Add the milk and dry yeast to the bowl, mix 40 sec /speed 3.
    Add flour, salt , sugar, milk powder, thickened cream and egg, mix sec /speed 3.
    Knead the dough for 4 minutes.
    Add the cubed chopped butter to the bowl and knead for a further 3 minutes.
    Place dough onto a lightly floured thermomat and divide into two.
    Roll the first batch of dough into a rectangle.

    Put the filling ingredients into the TM bowl and mix 10sec/ speed 4.

    Spread half of the filling mix on the first rectangle dough, being careful to only fill 3/4 of the rectangle and leave about 5 cm edge on sides also.

    Roll up using your thermomat to help keep the scrolls nice and tight.

    Cut into scrolls using a piece of fishing line to help give you a nice clean cut.

    Lay scrolls onto a prepared tray either with a baking liner or baking paper.

    Repeat the above process for the remaining half of the dough.

    Set aside for 1 hour to prove, only half an hour in warmer temperatures will be needed.

    Place into a fan forced oven at 180c and cook for approx 30 minutes or until golden brown.

    To prepare the glaze place sugar in the TM bowl and mill 20sec/ speed 9.
    Add the vanilla and boiling water mix for 5 sec/ speed4, adding more water if needed to reach a nice drizzling consistency.

    Drizzle over the scrolls while warm.

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
