Ingredients

Pancakes

  • 40 grams oil
  • 200 grams Milk, any variety - dairy or non dairy
  • 5 eggs
  • 40 grams sugar, rapadura is best
  • pinch salt, large
  • 75 grams Coconut Flour
  • 65 grams starch, arrowroot or potato
  • 1 teaspoon lemon juice
  • 1 tablespoon baking powder, GF or non GF

Recipe's preparation

  1.  

    1. Add oil, milk and eggs to the bowl and mix for 30 seconds on speed 6

     

    2. Add sugar, salt, coconut flour, starch and lemon juice. Blend for 20 seconds on speed 5.

     

    3. Add baking powder and mix for 10 seconds on speed 5.

     

    4. Lightly grease a non stick pan. Pour the batter in and lightly spread out so it’s even. Cook on medium/low heat for around 2 minutes, with the lid on. Flip and cook on the reverse side for about 1 minute, again with the lid on. Take note: if the temperature is too high, the bottoms will burn before the insides have cooked and will be difficult to flip.

    Vanilla essence or chocolate chips can be added at step 2. .

    Any fruit or berry can be used to flavour. For example, add 1 cup frozen or fresh blueberries at step 3 or berries can be placed into pancakes as they are cooking. Add banana, roughly broken into pieces, can be added at step 2.

    Easy recipe - really tasty, kids loved them. Don't agree that they are grity? (above) Though mine are not as fluffy looking as the photo, but the fluffest ones I have made using coconut flour, dairy and grain free!

    Fabulous, quick and easy and really tasty. will definitely be making pancakes more often now that I've got his recipe.

    I added some cinnamon and vanilla essence and reduced the sugar to 30g.

    Fluffy coconut pancakes are my favorite.It is totally gluten free, grain free and dairy free product.I love all these. This is very easy to make at home. All these are very tasty and delicious. So i think that you will try this at home. Thanks

    Pretty good recipe especially given it's coconut fllur. I used coconut milk as the milk and added I vanilla essence. Nice and fluffy too

    I really liked this recipe! Quite filling, healthy & made more than 15 large pikelet sized pancakes. I added some water to thin it out as I went. 

    Will make it again!

    lovely pancakes! i got 10 med size pancakes, they were lovely and could almost pass for regular pancakes, my kids loved them! I used cream instead of milk too! Devine! thank you!

    I made them again and this time added vanilla essence and 1 banana to the batter and reduced the sugar to 20g. Didn't have enough eggs so replaced some with chia gel and they still turned out great, still easy to flip.  tmrc_emoticons.)
