Ingredients
Granola (GF,DF
- 60 g pitted dates
- 400 g Mixed Nuts, eg Almonds, Cashews, Macadamia, Brazil Nuts
- 60 g sunflower seeds
- 60 g Pepita Seeds
- 60 g dessicated coconut
- 40 g seeds, hemp
- 20 g sesame seeds
- 20 g flaxseeds
- 100 g Rice malt syrup, alternative maple syrup or honey
- 40 g coconut oil
- 10 g Vanilla Paste, to taste

- Preheat oven to 160°C (fan forced)and line large baking tray with baking paper. Air fryer can also be used
- Add 60g dates to bowl. Chop 5 secs on speed 7
Place 400g mixed nuts into mixing bowl, and chop for 2 secs on speed 6. - Pour nuts into another bowl
- Place bowl with nuts on mixing bowl lid
- Add to bowl - 60g sunflower seeds, 60g pepita seeds, 60g desiccated coconut, 40g hemp seeds, 20g flaxseeds, 20g sesame seeds, 20 chia seeds (any seeds can be used or left out)
- Mix together and set aside
- Into Thermomix bowl weigh in 400g maple syrup/rice malt syrup/honey, 100g coconut oil and vanilla to taste
- Heat for 2 minute / 100°C / speed 2
- Pour syrup mixture into dry ingredients mixture and mix well with spatula
- Bake for up to 20 minutes or until golden brown - ensure you are turning every 5 or so minutes as it will burn easily. If using an air fryer turn every 2 -3 minutes and it will only take about 10 minutes to cook on 175°C
- Remove from oven and allow to completely cool on a baking tray
- Serve with yoghurt and berries for a delicious breakfast or dessert
- Store in air tight container in the cupboard

If you like a more clumpier granola, add more Rice Malt Syrup / Maple Syrup
Dried friuts can be added after baking
Makes approximately 855g. I have about 30g on my yoghurt, this will give you approximately 28 servings.

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
