Ingredients

  • 300 g chicken thigh fillet, Skinless, cut into pieces
  • 300 g Mixed White Roots & Vege, e.g celeriac, onions, garlic, leek. Cut into pieces as needed.
  • 4 sprig Mixed fresh herbs, eg. Rosemary, Thyme, Parsley. Leaves only.
  • 150 g Himalayan salt
  • 120 g white wine
  • 1 bay leaf
  • 1 whole clove
  • 5 coriander seeds

Recipe's preparation

    Prep Stuffs
  1. 1. Place chicken pieces into the mixing bowl and mix 5S/S7. Transfer into a bowl and set aside. 

     

    2. Place mixed white roots, vege's and fresh mixed herbs into the mixing bowl and chop 10S/S5. Scrape down sides of mixing bowl with spatula. 

     

    3. Add salt, white wine, bay leaf, clove, coriander seeds and reserved chicken mince. Cook 25M/V/S2, placing simmering basket instead of measuring cup onto mixing bowl lid. Mixture will thicken and become fairly dry. 

     

    4. Remove simmering basket, insert measuring cup and blend 1M/S7. Transfer into an airtight container and allow to cool before using or storing in fridge. 

     

Tip

1 Tbsp = 1 stock cube

To make stock use 1 Tbsp per 500g water

Keeo in fridge for several months

Salt is a preservative, it wont be too salty when made up

If you decrease salt, store in freezer

Add small quantities of sea vege's eg. dulse flakes, for added nutrient value.

Adapt using whatever is left in your fridge. weight what you have to keep recipe consistent.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
