Ingredients

Vanilla Coconut Yoghurt

  • 750 g Ayam Light Coconut Cream
  • 1 sachet Queen Jell-it-in, Vegetarian Gelatin
  • 1-2 tbsp maple syrup or honey
  • 2 capsules Probiotic
  • 1 tsp vanilla essence

Recipe's preparation

  1. Mix coconut cream and Jell-it-in 10 mins 100 degrees Speed 5.

    Cover bowl with a teatowel and leave to cool to 37 degrees - usually approximately 2 hours.  

    To test the temperature - transfer the mixture (which should have set to a jelly consistency) back into the Thermo bowl and set the bowl back into the Thermomix.  If it is still too hot cover and leave a little longer. If it has cooled below 37 degrees mix again for 2mins 37degrees Speed 4.  

    At 37 degrees add the contents of the probiotic capsules, maple syrup and vanilla.

    Mix 30 seconds Speed 5.  

    Pour into small containers and keep warm for 8-12 hours until preferred taste.  

    Transfer yoghurt back into Thermomix bowl (it will by now have separated into solid and liquid) and mix 10 seconds Speed 5. Scrape down sides with spatula and repeat.  

    Pour into storage bowl and refrigerate.  The yoghurt will thicken as it cools.

     

     

Tip

After initial mixing I transfer the mixture to a different bowl to cool so I can continue using my Thermomix while the mixture is cooling.

If you are using a dehydrator to ferment the yoghurt, set it to 46 degrees

The quantities can successfully be doubled to make a bigger batch

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
