Ingredients

Protein banana bread

  • 360 grams plain flour
  • 60 grams Protein Powder, flavour of choice
  • 1 teaspoons bicarbonate of soda
  • 3/4 teaspoons baking powder
  • 3/4 teaspoons salt
  • 1/2 teaspoons ground cinnamon
  • 360 grams banana, mashed and preferably overripe
  • 110 grams yoghurt, or additional banana
  • 110 grams honey
  • 80 grams water
  • 2 teaspoons vanilla extract
  • 360 grams chocolate chips, give or take as you please

Recipe's preparation

    Steps
  1. Preheat oven to 180C and grease two bread tins. Grab some parchment paper, scrunch it up and place it in some water, then unscrunch it and mold it in around the bread tins.
  2. Place bananas in the thermomix bowl and 'mash' speed 3 for 3 seconds.
  3. Then add yoghurt, vanilla extract, honey, and water and mix speed 5 for 10 seconds
  4. Then add cinnamon, salt, baking powder, bi-carb soda, protein powder, and plain flour and mix 10 seconds speed 5. wipe down the sides of the bowl and mix for a further 10 seconds speed 5
  5. Then add your chocolate chips, put your blade on reverse and mix speed 3 for 1 minute or until choc chips are evenly placed throughout batter.
  6. Pour the batter into the prepared bread tins, filling to about 2/3 full.
    place in the center of the oven and cook for 40 minutes, while keeping an eye on it
  7. When 40 minutes is up, turn the oven off and leave the protein banana bread in there with the door closed for an additional 5 minutes
  8. After this time, if the top of the bread is golden but a knife inserted into the center does not come out mostly clean, you can place a layer of tin foil on top and bake for an additional five to ten minutes, or as needed.
