Ingredients

Moist Blueberry Muffins

  • 375 grams plain flour
  • 3 teaspoons baking powder
  • 1 teaspoons bicarbonate of soda
  • 220 grams white sugar
  • 1/4 teaspoons salt
  • 250 grams buttermilk
  • 4 tablespoons Butter
  • 4 tablespoons vegetable oil
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 310 grams blueberries, can be frozen

Recipe's preparation

    Method
  1. Preheat fanforced oven to 200 degrees celcius (180 in a normal oven).
  2. Line a cupcake tray with patty pans.
  3. In thermomix bowl, add 375g of plain flour, 3 tsp of baking powder, 1 tsp of bicarb soda, 220g of white sugar, and 1/4 tsp of salt. Mix together 15 seconds, speed 5.
  4. In a seperate thermomix bowl, mix 250g of buttermilk, 4 tbs butter, 4 tbs vegetable oil, 2 large eggs, 2 tsp vanilla extract, for 5 seconds, speed 7.
  5. Pour dry ingredients into wet ingredients bowl and combine for 5 seconds, speed 5.
  6. If using frozen blueberries, lay them out on a teatowel and fold it over. Gently pat the berries to remove any extra juice to prevent them from bleeding into mixture.
  7. Manually fold in blueberries with spatula until spread throughout mixture evenly.
  8. Fill patty pans with muffin mixture just near the top so they rise nicely and look full.
  9. Place muffin tray in preheated oven and bake for 5 minutes, then turn oven down to 180 (160 in normal ovens) and bake for a further 13 minutes.
    (Just to make sure they are cooked evenly, turn tray around halfway through the 13 minutes).
  10. Let muffins cool, then enjoy.

Tip

Buttermilk can be made up of 3/4 cup of milk, and the rest vinegar until it makes up 1 cup (250g).
