Ingredients
Pavlova/Meringue Base
- 170 grams aquafaba, Drained off 400g tin of Chickpeas - CHILLED
- 300 grams sugar, (dont be tempted to lessen it)
- 1 tablespoon arrowroot or cornflour, ensure gluten free
- 1 pinch salt
- 2 teaspoon vanilla essence
- 1 teaspoon Cider Vinegar

Preheat oven to 180 degree C.
Line two baking trays with baking paper and trace a 20cm diameter circle on each one.
Add sugar to TMX bowl. Grind 15secs speed 10 with lid and MC on. Set aside.
Pour the prechilled Aquafaba into "Closed lid" bowl. Insert butterfly. Put on lid and MC. Speed 4. As Aquafaba starts to thicken remove MC to allow air in. As it thickens slowly add ingredients, starting with the cider vinegar, drizzle in the sugar, cornflour, and vanilla essence.
Continue to whip at speed 4 only, for about 7 mins or until it has at least doubled in volume.
Heap 1/2 of the mixture on each baking tray circle and spread to edges of circle. If making meringues, transfer mixture to piping bag and pipe into circles on the tray.
Put the meringues or pavlova into the oven and turn heat down to 120 degrees for 1 1/2 hours. then turn oven off and allow pavlova to cool in oven.
The pavlova should sound hollow when very lightly tapped. Once completely cooled, top with cream and fruit or filling of your choice, layer the second circle on top and top that also with fruit, cream and decorate with choc shards or swirls or shavings
Alernatively make three smaller circles or use Aquafaba from two cans to create more pavs for more layers!!!
Tip
Use coconut cream to top pavlova and this is an "Egg Free, Gluten Free, Dairy Free" Pavlova!!

Just trying this now. The mix is so runny, but I am defying the odds and have grabbed some patty pans and am now making small discs in a muffin tray, aswell as one flat disc Frisbee. So if it tastes bad, at least we'll have entertainment sorted for Xmas! Fingers crossed!
microelk: I just reread the recipe again and it is speed 4 on step 3.

microelk: I'm assuming she means Speed 4 as further along she says "continue on speed 4"?. I just tried to make vegan meringues in my thermomix and failed miserably as I used an ordinary recipe. So, I thought I would look to see if there was one here. I wish I had have tried this first!
