Ingredients

BATTER

  • 70 g White Rice (dry), and
  • 70 g tapiaco flour
  • OR 140 g Gluten free plain flour, on its own (not as well as above two flours) plus :
  • 50 g Cornflour (GF)
  • 3 --- eggs
  • 175 g Milk (Any)
  • rice bran oil for drizzling

Recipe's preparation

    METHOD
  1. Make up the batter: Mill the Rice, 30 secs/ Speed 9 Closed lid"Closed lid" . Add the Tapiaco Flour and Cornflour and mill again 20 secs / Speed 9.

    if you are only using Gluten Free flour alone then miss this step out

  2. Pre weigh the 175 g of milk and set aside. Add 1/2 tsp of salt to flours in the bowl. Crack the eggs into the bowl and Closed lid"Closed lid" 2 mins speed 1 or 2. As this is slowly mixing gradually add milk thru the hole in lid adjusting speed so as not to splash you, but ensuring the mixture is whisking all the time until lump-free.

    Leave batter to stand in bowl until you are ready to cook them.

  3. Heat Oven to 230 degree C. Drizzle a little of the oil in the bottom of each 2 x 12 hole muffins tins and put both trays into the oven to heat through. (5mins or so)

  4. Pour the batter from the TMX Closed lid"Closed lid" evenly between the muffin tins. Put the tins back into the oven and leave undisturbed for 20-25mins until the puddings have puffed up and browned. Serve immediately.

Tip

Variable for your choice of flour. Variable for your choice of milk, although I have not tested it with other milks (only cow) but would be interested to hear your results!!!

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

    Made these a few nights ago...I am new to gluten free and was so happy to find a recipe for Yorkshire Puddings. I milled the rice etc. The only change I made was the milk. I used lactose free.
    Oh MY YUMMY Goodness!! They rose perfectly, were crispy on the outside and simply melted in our mouths. I told everyone they were GF when they were returning for seconds. Family starting to think THEY can manage my GF medical necessity. Big Smile
