Ingredients
- 1000 g Cooked Kumera, (mashes best while hot)
- 140 g Milk
- 75 g cream
- 60 g Butter
- 50 g brown sugar
- 1/4 tsp allspice
- 1/4 tsp cinnamon

- 1 tbsp thermomix vege stock paste

Cook Kumara in Saucepan or TMX on 100 degrees for 20mins "Closed lid" speed 2 till cooked in enough water to cover. I find cooking in a saucepan about 10mins till soft is better as it is a large amount. Then once drained, tip all kumeras into TMX and add all other ingredients. Mix at speed 6 then gradually increase speed to speed 9 and puree until smooth. (may need to place simmering basket on top to stop splashing) about 30secs. At this stage you can tip it out into your serving dish to keep warm in an oven til ready for use.
Or ....... leave in TMX, put on speed 3 or 4 temp 105 degrees, 8 - 10mins. Ensure the top of the kumera is turning (so a vortex is forming) increase speed if necessary but not above speed 5. Once the whole mixture is hot and nearly bubbling I then tip out into empty yet prewarmed (with hot water), Thermoserver. This will keep warm on your table, (for about 2 hours) till you are ready to serve it up as a base for your restaurant style stack meal!!!
Enjoy layered with caramelised onion, meat, Zucchini pie/slice or ribbons of zucchini. Add portabello mushrooms, bbq'd capsicum, carrot and beetroot strings etc. Your options are endless for this healthy layered meal!! Drizzle with vingarette if desired.
Decorate with spinach leaves and have potato wedges on the side.

Can add other spices or substitute. Can put into a dish and add a crumb topping if you wish for side dish to complete your main meal.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
