Ingredients

Beetroot, Fennel and Blue Cheese Burgers

  • 350g Beetroot, Peeled and cut in quarters
  • 1 fennel bulb, Small cut in quarters, reserve prong for garnish
  • 250g Microwaveable brown rice
  • 3 garlic clove, Peeled
  • 2 level teaspoons ground cumin
  • 1/2 level teaspoons dried mint
  • 1/2 level teaspoons Dried parsley
  • 20g olive oil
  • 1 to 2 eggs
  • 1/2 level teaspoons sea salt flake
  • 1/4 level teaspoons black cracked pepper
  • 1/2 cup --- Breadcrumbs or Almond Meal
  • 100g Danish blue cheese, To melt over the burgers
  • Lettuce Leaves
  • 4 to 5 breadrolls
  • 1/4 cup Sliced pickled cucumbers
  • 1/2 cup Tomato ketchup or relish

Recipe's preparation

  1. Add fennel chopped in quarters, garlic cloves and Cop 3 sec / speed 7.
    Scrape down the sides of the mixing bowl
  2. Add oil and Cook 5 min / 100c temp / Reverse speed 2
    Scrape down the sides of mixing bowl
  3. Add raw beetroot and chop 3 ces / speed 5. Scrape the sides of the mixing bowl
  4. Add 250g microwaveable brown rice, 1/2 cup of breadcrumbs or 1/2 cup almond meal, 2 tsp cumin powder, 1/2 teaspoon dried mint (optional) 1/2 tsp dried parsley (optional), 1 to 2 eggs, 1/2 teaspoon sea salt flakes, 1/4 black cracked pepper. Mix 3 sec /Reverse speed 2 withvan aid or thebspa through the hole of the lid
  5. Transfer the contents into the simmering basket or a medium sieve placed over a bowl, to drain any excess moisture/water from the beetroot mixture, set aside and let the mixture cool down apx 10 to 15 min before forming into burger patties.
  6. Form 4 to 5 burger patties, can be formed using burger or crumpet rings or free formed using your hands. Place the formed patties on a tray lined with baking paper and place in the fridge for the burgers to set.
    Ps. Use disposable gloves to form the burger patties so your hands don't get beetroot stains on them.
  7. Cooking options .
    1. Lightly pan fry in a shallow pan with a bit of oil until cooked.
    2. Cook in pre-heated pie maker (4 holes) lightly spayed with olive oil for 8 to 10 min on each side with closed lid. Take care flipping the patties over so they don't fall apart. Once cooked top each pattie with danish blue cheese and close the lid until the cheese has melted.
    Open the lid and let the patties slightly cool down before taking them out.
    Serve the patties to your liking while still warm.
    3. Cook the burger patties on a flat tray lined with baking paper in the pre-heated oven at 190c f/f for 20 to 30 min or until cooked, flipping them over half way through cooking. Few minutes before the end of the cooking time top each one with danish blue cheese and return into the oven until the cheese melts.
    Take out and let them slightly cool than serve to your liking.
