Ingredients

Chicken Chimichanga

  • 800 grams water
  • 3 fillets chicken breast, Approx 700g, sliced(5x2cm)
  • 200 grams cheese, Cut into 3xm pieces
  • 1 --- onion, Cut in half
  • 2 cloves garlic
  • 1/2 --- red capsicum, Cut into 3cm pieces
  • 400 grams canned tomatoes
  • 2 tsp ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper, freshly ground
  • 6 portions tortillas, Large
  • vegetable oil, For frying
  • sour cream, To serve
  • Guacamole, To serve
  • Tomato salsa, To serve

Recipe's preparation

    Chicken Chimichanga
  1. Place water into mixing bowl. Place Varoma dish and tray into position and place chicken breast pieces into Varoma dish and onto tray. Secure Varoma lid and steam 8 min/Varoma/speed 1.Slow Cooking"Slow Cooking"
  2. Stir chicken pieces with spatula to ensure even cooking, then secure Varoma lid, and cook for a further 8 min/Varoma/speed 1.
  3. Remove varoma and set aside. Discard water.
  4. Place cooked chicken into mixing bowl. Shred chicken 7 sec/Counter-clockwise operation"Counter-clockwise operation" /speed 4. Transfer chicken into separate bowl and set aside.
  5. Place cheese into mixing bowl and grate 8 sec/speed 8. Transfer into bowl and set aside.
  6. Place onion, garlic, capsicum, canned tomatoes, cumin, oregano, salt and pepper. Chop 4 sec/speed 5. Scrape down sides of mixing bowl.
  7. Add reserved shredded chicken and 50g grated cheese to mixing bowl. Combine 6 sec/Counter-clockwise operation"Counter-clockwise operation" /speed 4.
  8. Arrange chicken mixture in a line in center of tortillas top with reserved cheese. Take care not to over fill. Fold the sides in then snuggly fold bottom side up and roll to wrap until seam side down.
  9. Heat enough oil in skillet over medium heat to shallow fry. Once hot place chimichangas seam side down. Once golden and crispy flip using tongs to crisp other side.
  10. Serve warm, topped with salsa, sour cream, guacamole and a side of mexican rice. Enjoy!

Tip

You can use leftover chicken and begin at step 4.
Large tortillas work best
If your having trouble keeping tortillas rolled secure with a couple of toothpicks.
