Ingredients

WET INGREDIENTS

  • 100 g Butter
  • 160 g Brown Sugar
  • 160 g honey

DRY INGREDIENTS

  • 220 g Rolled Oats (2 Cups)
  • 45 g Rice Bubbles (1 Cup)
  • 65 g Cornflakes (2 Cups)
  • 110 g dried fruit eg cranberries, Raisens, sultanas, dried apricots etc
  • 1 tsp vanilla essence
  • handful optional seeds or nuts
  • Remember that rice bubbles and cornflakes dont weigh much, so hence the small g worth compared to volume of cup.

Recipe's preparation

    Preparation instructions and baking.
  1. Line a Lamington size baking tin with baking paper. Put all wet ingredients into TMX.Closed lid"Closed lid" . Speed 4 or 5, 120 degrees, 9  minutes . While this is cooking weigh all dry ingredients into a another mixing bowl on top of Thermomix. When this wet mixture has finished cooking, add the tsp of vanilla essence, put on speed 4 for 3 secs to combine then pour liquids onto dry ingredients and combine well with spatula in a bowl. I have tried adding this at this stage in the TMX bowl on Counter-clockwise operation"Counter-clockwise operation" , but have found it more successful by hand. 

    Once all mixed together, press it all into the Lamington baking tin and set and fridge. No baking required.

Tip

To take this whole recipe to another gourmet level, add craisens and Pistachio nuts to the dry ingredients and once it is pressed into baking tin, then drizzle with white chocolate for a real festive look. Great for taking to parties and 'take a plate kids parties'. Can leave out the nuts for a nut free option. 

If you have left over muesli or cereal use this instead, but just ensure the total of all the dry ingredients end up the same as in the above requirements.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
