Ingredients
Blueberry & Banana Pancakes
- Coconut Oil for Frying
- 100 g Buckwheat groats
- 100 g almonds
- 10 g Flaxseed
- 1 tablespoon chia seeds
- 100 g oats
- 1 Large ripe banana
- 1 teaspoon cinnamon
- 1 tablespoon Maple syrup
- 1 teaspoon Gluten Free Baking Powder
- 250 g water
- 100 g blueberries, fresh or frozen
- pinch of salt

1. Start by heating some coconut oil in a frying pan on medium to high heat - make sure there is enough to coat the bottom of the pan.
2. Weigh the buckwheat grouts, almonds, flaxseed and chia seeds into the Thermomix bowl and grind 10 sec/speed 9 until flour forms.
3. Add the oats and grind again for 10 sec/speed 9.
4. Add the banana, cinnamon, maple syrup, baking powder, water and pinch of salt and mix 20 sec/speed 5 until everything is combined. Scrape down the bowl, add the blueberries and mix 10 sec/reverse/speed 1.
5. Turn the heat down on the frying pan and drop heaped tablespoons of the pancake mixture onto the hot pan and spread evenly with the back of the spoon. Let them cook for a few minutes until the bottom is browned then flip over to cook the other side. Remove the pancake from the heat, add a little more coconut oil if needed and go again until all the mixture is used up.
6. Serve immediately whilst they're still warm with an extra drizzle of maple syrup!

These were great, made this morning with a combination of oats & quinoa flakes and were devoured for brekky by my boys. I got 18 small ones. Would be great for school - our school is not nut fee.

You could always try quinoa flakes instead. Some people who are gluten intolerant can tolerate oats, which is probably why they are in the recipe.
Looks delicious but oats are not considered gluten free in australia
Cooked this for myself, would probably halve the receipe next time. However, I have my breakfast in the fridge for the next 2 days! Reheat and eat!.
Really filling, healthy and tasty. Plates licked clean will make a double batch next time.

These were really good. I had to add heaps more water as I let the mixture sit too long and it solidified! Really yummy.
