- 500 g icing sugar

- pink food colouring

1. Line a slice tray with baking paper or use a silicone tray.
2. Make the white ice rst. Add desiccated coconut (250g) and icing sugar (500g) to the bowl. Mix for 10 seconds/reverse/ speed 5.
3. Scrape down the sides, then add water (80g). Mix for 10 seconds/reverse/ speed 5.
4. Spread the white ice mixture evenly in the tray.
5. Without washing the bowl, make the pink ice. Add desiccated coconut (250g) and icing sugar (500g) to the bowl. Mix for 10 seconds/reverse/speed 5.
6. Scrape down the sides, then add water (80g) and pink food colouring. Use as much food colouring needed to achieve the desired shade of pink. Mix on reverse/speed 5 until the colour is mixed through.
7. Spread the pink ice mixture evenly over the top of the white ice mixture. Refrigerate for at least 2 hours, overnight or until firm.
8. Cut the coconut ice into squares. Serve with the pink side up, the white side up or alternate the colours to show both.
Tip
Use a food colour of choice to change the colours of the coconut ice. Make red and green for Christmas or orange and red for Halloween.
