I'm cooking this todayRecipe's preparation
- Zest a lemon and reserve. Juice lemons (if juicing using the Thermomix, filter/strain before use)
Add lemon juice, zest, filtered water, sugar and citric acid to the TM bowl.
Cook 15 mins/90C/speed 2/MC on.
Strain and pour into sterilized bottles/jars.
Tip
TO SERVE: Mix as you would regular cordial (to taste) over ice with chilled/soda water.
You can use a vegetable peeler to remove thin strips of zest. Blitz 5 secs/speed 9. Scrape bowl and repeat if required.
Excess lemon zest can be dehydrated for future use eg: lemon powder, lemon salt. Avoid white pith as it will give a bitter taste.
Alternatively, you can store zest in a jar or ziplock bag in the freezer - you’ll always have fresh zest on hand.
Lemon cordial concentrate will store unopened for a few months, as long as it is stored in a properly sterilised bottle. Once opened, keep in the fridge.
If using less-refined sugar, note the finished cordial will be darker in colour than pictured.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Can i use natvia instead of sugar ? Any suggestions?
Waaay better than store bought - not sickly sweet and has a great taste! Also ... good to know that no 223 preservative is used, re: if you're an asthmatic or the like. This is a winner for me.
Licious!!!!
Puts a zing in your step.
This cordial is delicious 😋 I had an abundance of lemons & limes (used mostly limes)
I doubled the recipe & also the cooking time.
Turned out perfectly. Love to make things from scratch & know what I am putting into my cooking.
The limes make it extra zesty which I love.
I will be adding some to my G & T for sure 🍹
This cordial is the bomb
Made this today, it's great for kids water ice blocks. Will try it with soda water too
Ultimately, we take a huge burden off your shoulders. Academic writing is stressful. Essays are an important part of the coursework. Some professors consider them more important than exams. By hiring professionals to do the work, you won’t have to worry about the outcome. It will be great! https://www.litreview.net/
