Golden Paste

  • 72 g ground turmeric, Organic is best for higher curcumin content/value.
  • 250 g water
  • 80 g coconut oil, unrefined, cold pressed
  • 7 g black pepper, freshly ground
  • 10 g cinnamon, Ceylon, Optional, must be 'ceylon' cinnamon to be effective
  • 250 g water, In reserve

Recipe's preparation

  1. Add pepper to TM bowl, Mill 20 seconds/speed 10. Scrape down the bowl. You can skip this step using a mortar and pestle or coffee grinder. (You need to use freshly cracked (ground) black pepper, to benefit from the primary active ingredient - piperine. Piperine oxidises quickly on exposure to air, the carrier oil retains this). Place in a bowl and set aside.

    Rinse TM bowl. Add 250g water to TM bowl, add turmeric, placing around the blades to avoid clumping. Heat 5mins/95C/speed 1/MC off.
    Scrape down sides of the bowl, continue to heat for an additional 5 mins/95C/speed 1/MC off.

    Use a good quality/organic turmeric powder, the better the quality the higher curcumin value.

    Looking through the hole in the lid, adding the remaining water, as needed to keep it to a paste consistency. The exact thickness isn't important - you can adjust that to your preference.

    If using raw turmeric extend cook time by an additional 20mins.

    Add coconut oil, pepper and ceylon cinnamon (optional)
    Blend 30 secs/speed 4/MC on.

    Store in sterilised jars up to two weeks in the coldest section of the refrigerator or freeze in droplets or ice-cube trays.

    If you see any sign of mould, or notice an 'off' flavour, discard and make a new batch.
  2. DIRECTIONS FOR USING GOLDEN PASTE:

    For adults and older children, start with 1/4 tsp twice daily inor with food.

    Most dogs can start with the same amount. Small dogs and cats should start with no more than 1/8 tsp.

    For everyone; After 4-5 days you can increase the amount and/or the frequency of intake. Wait 4-5 days in between each increase. If you experience gas, bloating, loose stools or other digestive upsets, reduce the amount and/or frequency of usage.
    There is no specific maximum, but it is recommended to consume no more than around 3 teaspoons per day. Turmeric is metabolized fairly quickly even when consumed with pepper, so it's better to have small amounts often.

    If you are using any prescription medication, please consult your doctor before adding any biologically active foods like turmeric to your diet.

    Golden Paste goes well in egg and pasta dishes, in yoghurt, soups and stews, in smoothies and other beverages. You can also add it to condiments such as salad dressings, mayonnaise, mustard, or hummous. You’ll find your own preference as you become accustomed to it. Many people like to have it in coffee or cocoa.

    Golden paste can be added to any cooked food, though it should not be added to raw foods which are then cooked. This will damage the piperine in the black pepper. It’s fine to add golden paste to an already cooked food which is just being warmed up to serving temperature.
    Please note that BAKED TREATS are not effective as a therapeutic source of turmeric. The high heat of oven baking degrades the curcumin and destroys the piperine.

Tip

Ceylon cinnamon has been added to eliminate, or at least reduce the 'cat pee' odour that some horses and dogs may develop.

Coconut oil can be substituted with extra virgin olive oil or linseed oil.

If making for dogs you can use a fish/salmon oil. NOTE: all fish oils become rancid very quickly after being opened. It is recommended to either freeze or add the oil when feeding the golden paste if made with salmon or another fish oil. The paste will keep only a few days in the fridge if you make it with fish oil.

Please note: Turmeric is normally cooked in the process of making it into powder. This step has been skipped when using raw turmeric. If you're using raw, the turmeric/water mixture needs to be cooked for at least 30 minutes, not the 7-10 minutes listed. You may need to add more water as the longer simmering period will result in more evaporation.

There is no preference between raw or powdered, just as long as you make sure that any raw turmeric is fully cooked before consuming it.

Turmeric will stain the lid of your Thermomix ... leave the lid out in direct sunlight for an hour or so and the stain will fade away.

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
