Ingredients

Green Chicken Curry

  • 1 medium onion, Quartered
  • 15 grams olive oil
  • 3 tablespoons green curry paste
  • 400 grams light coconut milk
  • 400 grams chicken breast, cubed 2 cm
  • 2 leaves Kafir lime, thinly sliced
  • 250 grams green beans, sliced
  • 1 red capsicum, sliced
  • 220 grams udon noodles

Recipe's preparation

    Green Chicken Curry
  1. Chop Onions 3 Seconds, Speed 7, Scrape down.

    Add oil, Kafir Lime leaves & paste.

    Sauté onion for 5 Minutes, Varoma, Speed 1 or until fragrant.

    Add coconut milk.

    Bring to boil. 6 Minutes, 105C, Speed 1, MC off

    Reduce heat to low.

    Simmer for 6 Minutes, 95C, Speed 1, MC off or until thickened slightly.

    Add Capsicum, beans & chicken.

    Simmer for 15 Minutes, 95C, Reverse, Speed Gentle stir setting"Gentle stir setting" or until chicken is tender.

    Cook Udon noodles according to directions.



    Serve chicken curry over Udon noodles.

Cook's notes

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C.

We use Australian tablespoons and cups:

1 teaspoon equals 5 ml;

1 tablespoon equals 20 ml;

1 cup equals 250 ml.

All herbs are fresh (unless specified) and cups are lightly packed.

All vegetables are medium size and peeled, unless specified.

All eggs are 55-60 g, unless specified.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

    Easy to follow - tastes delicious!  Chicken shredded down - but not an issue.  Cooked for a little longer, most likely why chicken broke down!  Thanks x
