Ingredients
Steamed Octopus with punched potatoes and green beans
- 1300 gram octopus, frozen, medium size works better, makes sure you defrost it before use
- new baby potato, enough to fit in the smearing basket
- salt, to taste
- 1 bay leaf
- 8 clove garlic cloves
- 1500 gram water
- 200 grams olive oil
- fresh chilli, to taste
- 500 grams green beans

- 1. Boil 1L of water – 10min/100°C/ Speed 1 or kettle mode
2. Place the octopus in the varoma over the sink and rinse it with the boiling water.
3. Add 500gr of water to the bowl. In the simmering basket put the baby potatoes (make sure they are wet) add salt and some olive oil about 40gr and place in the bowl.
4. Place the varoma on top with the octopus. Set the Thermomix to 40 min/ Varoma/Speed 1. Once the Thermomix has reached the varoma temperature adjust the time to 40 minutes again.
5. 15 minutes before the time finish, place the tray with the green beans in the varoma.
6. Once its finished cut the octopus into pieces and place it middle in an oven safe dish.
7. Slightly squash the potatoes and place it around the octopus.
8. Add 150gr of olive oil, garlic and fresh chilli (to your taste) – 3 sec/ Speed 5
9. Add the bay leaf and set 4 minutes/ Varoma/Speed 1.5
10. Pour the olive oil over the octopus, potatoes, and green beans.
11. Serve it hot and enjoy!!
