Ingredients

Dumplings

  • 250 gram chicken breast, chopped in chunks
  • 250 gram chicken thigh, chopped in chunks
  • 1 small red onion
  • 3 spring onions
  • 200 gram green cabbage
  • 1/2 teaspoon ground cummin
  • 1/4 teaspoon chilli powder
  • 1 teaspoon salt
  • 1/4 teaspoon garam masala
  • 1/2 teaspoon momo masala (optional)
  • 1 pinch tumeric
  • 50 gram Butter, melted
  • 3 tablespoon olive oil
  • ginger and garlic paste
  • 2 packages gow gee/wonton wrappers

Dipping Sauce

  • 1 tablespoon sesame seeds
  • 4 tomatos
  • 1/2 bunch coriander
  • 1/4 teaspoon chilli
  • 1/2 tablespoon lemon juice
  • 1 teaspoon salt
  • garlic and ginger paste

Garlic and Ginger paste

  • 6 clove garlic
  • 50 gram fresh ginger
  • 1 tablespoon olive oil

Recipe's preparation

    Garlic and Ginger Paste
  1. Put ginger, garlic and oil in TM.  

    Chop for 10 seconds, speed 6. 

    Put the paste in a container.

  2. Dumpling Mixture
  3. Put onion, spring onion, cabbage in TM and chop for 10 seconds, speed 6. 

    Remove this mix from TM and put into a large mixing bowl.

    Put the chicken breast in TM and mince for 20 seconds, speed 8 (repeat step if chicken is not minced).

    Put chicken mince in the mixing bowl with onion mix

    Mince the thigh fillets 20 seconds, speed 8 and add this to the mixing bowl with minced breast and onion.

    Add half the ginger/garlic paste to the chicken mix.

    Add all the spices and melted butter to the chicken mix.

    Stir all ingredients well.

  4. Dipping Sauce
  5. Clean and dry TM bowl.

    Put sesame seeds in TM and roast for 3 minutes, 100 degrees, speed 1.

    Remove sesame seeds from TM and set aside.

    Put tomato in TM and chop for 30 seconds speed 6.

    Add the remainder of garlic/ginger paste and cook for 15 minutes, 80 degrees speed 1.

    While sauce is cooking prepare dumplings. 

  6. Folding Dumplings
  7. Put about 1 teaspoon of chicken mix in the centre of the wonton wrapper.  

    Wet the edges of the wrapper with water and fold in half to create a semi circle and squeeze edges together.  

    Repeat until all wrappers of chicken mix has been used.  

  8. Complete Dipping Sauce
  9. When tomato mixture has cooked add roasted sesame seeds and fresh coriander and blend 1 minute, speed 6.  

    Set sauce aside to cool.

    Wash TM bowl. 

  10. Steaming Dumplings
  11. Put 1 litre of water in the TM and bring to the boil 10mins 100 degrees speed 2. 

    Put dumplings in the varoma and steam for 20 minutes. 

    Serve with dipping sauce.
