Ingredients
Dressing and marinade
- 20 grams fresh ginger
- 100 grams Cashews
- 70 grams light EVOO
- 70 grams tamari or soy sauce
- 70 grams honey
- 70 grams white vinegar (or vinegar of your choice)
salad
- 12 sprigs Corriander or Italian Parsley, chopped
- 2 stalks spring onion
- 200 grams Cabbage roughly chopped
- 200 grams carrots
- 1 firm pear
- 70 grams roasted salted cashew nuts, put in a bag and bang to chop roughly
- 100 grams dried cranberries or cherries
- 100 grams rocket or spinach leaves

- 1000 grams chicken breast or thigh, cut into chunks
- 200 grams quinoa, soaked for 10 minutes

Place the ginger in the bowl and mix speed 7 for 3 seconds, scrape down sides and repeat if necessary- Add all the rest and mix speed 7/10 seconds
Place all ingredienst except the cranberries, rocket/spinach and cashews into the bowl
With the aid of the spatula mix 3-4 seconds speed 4.5
Set salad aside in a large seperate bowl
place 1000 grams of water into the bowl, strain quinoa into simmering basket and put in the bowl.
Divide chicken between varoma dish and tray.
cook 14 minutes/varoma/speed 2
Check to see if chicken is cooked, remove quinoa
If needed cook chicken and extra 10min/varoma/speed 2
Once cooked remove water add half the chicken and 100 grams of dressing to the bowl and shred 3 seconds reverse speed 3, repeat if necessary, add to the large bowl of salad and do the same with the remaining chicken
In a large bowl mix together the chicken, salad, quinoa, rocket/spinach place on a large platter and scatter cashews and cranberries over top
