  • 130 grams dry roasted almonds
  • 70 grams Toasted seasame seeds
  • 15 grams whole cumin seeds
  • 10 grams whole coriander seeds
  • 1 tsp sea salt, coarse
  • 2 tsp black peppercorns (freshly ground)

Recipe's preparation

  1. 1. Place cumin and coriander seeds in bowl and dry roast on 2mins/Varoma/speed 2.

  2. 2.  Place almonds, salt and pepper in bowl and mill 10sec/speed 10, repeat step as necessary for preferred consistency.

  3. 3.  Combine contents of bowl with seasame seeds and combine.

  4. 4. Serve with good quality Olive Oil and crusty bread or coat chicken or fish and bake or shallow fry.

Tip

You can roast and toast your own nuts and seeds as follows:

- Dry roast almonds in oven on 180deg for 8-10mins

- Place seasame seeds in dry frying pan on medium heat to toast, watch closely and remove from heat once they begin turning brown

You may also substitute almonds for cashews or hazelnuts.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31).     i agree re comment on speed 10. I turbo'd it a few times I read and watched it

    10 seconds on speed 10!!! makes almond meal. Not what you want in Dukkah. I suggest pulse for 2 seconds to get the right consistency.
