Ingredients

Fig and Apple Jam

  • 140 grams Red Apples, (Peeled and diced)
  • 700 grams ripe figs, (Halved)
  • 30 grams lemon juice, (Bottled)
  • Vanilla Bean Paste, (half teaspoon)
  • 1 level teaspoons ginger powder
  • 250 gram raw sugar

Recipe's preparation

  1. 1) Add all ingredients in order.
    2) Cook on Counter-clockwise operation"Counter-clockwise operation" , speed 2, 100 degrees for 30 mins with MC on.
    3) Cook Counter-clockwise operation"Counter-clockwise operation" , Verona, speed 2 for 10-15 mins with basket on instead of MC to help reduce liquid.
    4) When required paste is reached, add MC again and blitz on 6 for 10 secs.
    5) Pour into prepared jars.

Tip

I used over ripe figs.

    Awesome jam, good thickness/comsistency. On my 4th batch this week

    I used 1/2 cup orange juice to replace lemon juice, and also reduced sugar by 30 grams. I also only had green apples and it all worked out fine.

    This jam is the bomb!!! I used a bit less sugar, about 180g, could probably halve it though as it's still quite sweet. Love the little hit of ginger.
