Ingredients
- 1/4 cauliflower
- 1/2 cucumber
- 2 large onions
- 1 litre water
- 60 g salt
- 375 g apple cider vinegar
- 200 g sugar
- 1/2 tablespoon mustard powder
- 1/4 tablespoon curry powder
- 1/4 tablespoon tumeric
- 2 tablespoons cornflour

Place cauliflower, onions and cucumber in the TM bowl and chop on speed 7 for 2-3 seconds.
Add water and salt and soak over night.
Cook vegetables for 15 minutes on 100C on speed 1 until vegetables are tender and then drain using the steaming basket.
Put vegetables back into the bowl and add the vinegar, sugar and spices.
Bring to the boil on 90C for 20 minutes on speed 1.
Mix cornflour with a little water to make a paste and pour through the hole while it is mixing on 100C for 5 minutes on speed 3.
Pour into sterilised jars and seal immediately.

Too runny & mushy but nice taste.
Lovely, easy recipe and the end-result is tasty. I read the reviews first so made a few adjustments and am glad I did; despite this it was still too runny and mushy.
Changes made as follows:
1) I followed the recipe initially then read that people found it too mushy so I hand-chopped more cucumber and cauliflower and added it to the soak mixture. I only used 800ml of water.
2) I put into a bowl to soak overnight, didnt leave in the TM5 bowl.
3) I used 150g sugar, still too sweet so next time I'd use a bit less, maybe 120g.
4) when boiling I left MC off and used the simmer basket instead. I also used reverse instead of chop mode at this point.
5) Final step I did 5 min, varoma temp, mixing bowl on top, 3tbsp cornflour, reverse speed 3.
6) still too runny so did an extra 10 min, varoma temp, 1 tsp extra cornflour, reverse speed 3.
Still quite runny and mushy but tastes nice - next time I'd chop veges less, add less sugar, more cornflour, maybe less vinegar.

I found this far too sweet and runny. Next time I will reduce the sugar by at least 50g. I used the simmer basket instead of the MC and it was still too runny. The base flavours are nice though. Will give it another crack.
I found the pickle to be a bit runny. The second time I made it I left the MC out and used twice as much cornflour and water. I also used raw sugar and reduced the amount to 150g. It turned out perfectly and I have another batch on the go as I type I prefer to chop the veggies by hand as I find the TM chops them up too much for my liking.
Lovely flavour. Can't wait to use it on toasted ham and cheese sandwiches. I made a few changes to improve the thickness. Chop each vegie separate for 2 sec on sp 5, reduce vinegar to 215g, and use basket instead of mc once all ingredients are added. Yum
Beautiful recipe, (i used about 650g of cucumbers) flavour is amazing, just like my Nan used to make! I agree with other comments slightly runny.
Can you use normal vinegar? I went shopping thinking I had apple cider at home already but when I got home and checked it was red wine vinegar
Whilst soaking overnight, remove from the jug and cover or the onion smell permeates through everything! Jug, lid, seal and house. Apart from that, recipe tastes great although was a little runny.
This recipe is great, although the vegetables were chopped too finely for me. I recommend chopping for 1 second and check to see if you want it finer or not. Ham and Salad sandwiches with this and Cyndi's gluten free bread....AMAZING!

How long does it keep for? Does it need to be in the fridge?
. I substituted the cucumber for green beans and next time would hand chop the veges as I like it crunchier but excellent recipe many thanks..
