Ingredients
Pesto
- 50 g Parmesan cheese, cubed
- 1 large garlic clove
- 1 red chilli fresh, deseeded if you prefer
- 1 bunch fresh basil
- 100 g extra virgin olive oil
- 60 g pine nuts, you may like to lightly toast before hand
- salt & peper, to taste
- 1 tablespoon lemon juice, (optional)

Delicious on toast with feta & tomato or as a dip
Add in a handful of spinach for some extra veggies for the kids & they won't even know!!
You can store it with some olive oil to cover the top of pesto until you are using it to keep the colour on the top.

I made this pesto for our visitors on Sunday, very nice, although I did put extra lemon juice in because it tends to go brown easily. I also used cashews as that's all I had in my cupboard.
Really delicious. Used cashews instead of pine nuts and worked well. Good time to make because of all basil in garden.
Yum. I will use this recipe to use up all my basil growing in my garden!
Made this but removed the chilli and replaced the basil with mint and the pine nuts with slivered almonds. I mushed it onto loin chops and grilled, Devine. Next time I wouldn't use as much Parmesan, oh and I didn't add the lemon juice.
