Ingredients
Shredded chicken/chicken broth & boiled eggs
- 1 litre water
- 2 garlic cloves
- 12 eggs
- 2 - 4 chicken breasts
- TMX vege stock paste or chicken stock paste
- fresh parsley a few
- lemon zest, peeled, optional
- 2 spring onions
- sea salt & pepper to taste
- lemon or lime juice to serve
- mixed veggies for the soup
- 2tbs coconut oil
- olive to drizzle on top, to taste/optional

Place lemon zest, parsley, spring onions & garlic into the TM bowl chop for 20 secs speed 10. Add the coconut oil & cook for 2 mins varoma speed 1. Add the stock paste into the bowl.
Cut chicken breasts in half & place into the simmering basket inside the TM bowl. Cover the chicken with water.
Place 12 eggs on the bottom level of the Varoma
Place veggies in Varoma tray, place lid on bowl then place Varoma into position.
Set time 30 mins on Varomaspeed 2.
Ensure chicken is cooked through, then allow to cool.
Carefully place eggs aside in a container.
Pour liquid broth/water into the Thermoserver with the steamed veggies. Place chicken in TM bowl and shred on reverse for 4 seconds on speed 4.
You can add some or all of the shredded chicken to your veggie soup & drizzle olive oil over with some lime or lemon juice.
Or you can use the shredded chicken in a salad.
Eggs are a perfect protein snack by themselves or to add to salads.
If you prefer you eggs cooked less you can remove them earlier - cooking time for veggies will depnd on how smal the pieces are.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Shredded chicken for wraps/ rolls/ adding to the soup, boiled eggs for healthy snacks/ also delicious added to the soup, and a very tasty broth/ veg soup! Lovely flavor. The chicken is so tender.
I have made this twice. Once like the broth with vegies and the other time i used parsnips, swede, cauliflower , carrot and celery.Once chicken was cooked I transferred to stove top and cooked until soft. Then back in thermo to blend. Added the chicken next and it was delicious and creamy.

Great recipe!! It was delicious! Hubby didn't notice it was for the TM5 and made it in the TM31, it turned out just as well I'm sure. He was a bit perplexed about the eggs and took him a while to realize they were just a side dish or for later but thankfully he didn't put in all 12 eggs. On the freezing comments, I freeze soups and casseroles (veg and meat) all the time and reheat them. Will do with this batch too. I'll try and remember to comment again when we have it down the track.

I use carrot, red cabbage, zuchinni - you can use anything you have in the fridge celery, depending on your taste.

I guess you can freeze it i'm not normally a fan of frozen & then reheated veg or chciken so can't offer advise from experience.
