Ingredients
Creamy Turmeric Broc Slad
- 2-3 cm fresh turmeric, peeled
- 150 g Raw Cashews Soaked
- 100 g water
- squeeze of lemon to taste
- 1 bunch medium broccoli, chop florets off and use stem as well, chopping into pieces beforehand
- 1 carrot, chopped into 4 or 5 pieces
- 1/2 green apple
- 1 Shallot cut into 5 cm pieces

In the mixing bowl, Add turmeric, soaked cashews, water, season to taste and add lemon to taste. Blitz sp 9 / 20 secs
For a thinner 'sauce' add more water.
Scoop out a majority of the turmeric cashew cream and set aside in a small bowl.
Don't bother washing mixing bowl. Add remaining ingredients: broccoli, carrot, apple and sgallots.
Chop 2-4 sec / spd 5
Check mix and chop again if needed until small pieces are achieved. Add the reserved turmeric cashew cream to the broc mix in the mixing bowl. MIX REVERSE spd 4 / 5 secs
SERVE and enjoy as a side, on a wrap or on its own.
Tip
You can easily use the TM31 for this recipe.
Increase the amount of turmeric for more prominent taste. Also add hemp seeds with the cashews for variety.
Save some of the 'cream' to use as a spread or dressing for other meals.

This salad is so delicious! I dubled the turmeric and also added some fresh red chilli. I didn't have shallots so I used one small red onion and also used brocollini instead. Will definitely be making this one again.
Just made for lunch, really like this salad and it's so healthy, added to my favourites.
