1. Pre-heat oven 170 degrees - grease/line a 30 x 20 cm Lamington pan
2. Grate 150 grams cheese (approx 1 cup) grated - 17 seconds - speed 5 - put in separate bowl
3. 1 large onion - finely chop - 4 seconds - speed 5 - put in bowl with cheese
4. 200 grams - rindless bacon - chopped - 5 seconds - speed 5 - put in bowl with other ingredients.
5. 1 carrot - finely chopped - 3 seconds - speed 5 - put in bowl with other ingredients.
6. 375 grams zucchini (approx 3) - grated - 5 seconds - speed 4
7. Add all ingredients in bowl to Thermomix, plus 55 grams vegetable oil, 5 eggs, 150 grams self raising flour
8. Mix well 20 seconds "Counter-clockwise operation" speed 5
9. Pour into prepared pan and bake in oven for 30 minutes or until cooked through.
Method
Tip
If you find the Zucchini a little watery be sure to squeeze it out.
Is also nice if you sprinkle with pine nuts before baking also served with a relish/chutney.

Great recipe. I did add some lovely mini cherry tomatoes that a friend gave me from her garden, for a little pop in the mouth. So easy to put together. Thank you.

I make this all the time as we grow our own zucchinis. I double the recipe and use a fairly hard sheep cheese as I am allergic to dairy and can tolerate this better. I put everything (once chopped) in a large stainless bowl and mix it together by hand using a spatula. I then place it in my huge oven tray with deep sides and cook it until golden. Everyone loves it and it is fantastic eaten cold out of the fridge! I have found it keeps for a few days if refrigerated as soon as it has cooled. I add salt and pepper.
Just made this but took considerably longer than suggested time of 30mins. I use a TM5 & used same ingredients. Only change was milk instead of water. Split recipe into 2 loaf tins but still took over an hour, & still & bit gluggy on bottom. Maybe it was my gluten free flour!
Just made this for my boys and it's yummy.. I did mine little differently.
1. Blitzed Tasty Cheese on Speed 5 & Set Aside.
2. Put Onion, Zucchini & Carrot - Speed 5
3. Added Sunflower Oil, Eggs, Cheese & Flour - Speed 4
5. I used muffin pans for single portions and sprayed those with Olive oil spray.
6. Baked for approximately 30 mins (until golden brown).
Made this recipe for the first time -
*Doubled the bacon
*Doubled the veggie shredding time as I like smaller pieces
*Put veg in strainer basket and squeezed out excess juice (I do the same for sausage rolls)
*Added a rounded tsp of stock powder and a pinch of pepper to the flour
*Cooked for around 40mins
Next time I'm going to make it with the same changes but 75g tasty cheese and 75g Parmesan cheese

I had a 400 gram zucchini from the garden, so increased the ingredients a little across the board and it was excellent! Had to help the mixing along a little, but other than that, no issues. I only had 2 x 20cm square tins so I used them.
One is nearly gone, having barely cooled! 😆
I added two carrots and it turned out quiet sweat.
would be good as savoury muffins too.
So delicious! Really enjoyed by all. Great cold or hot. Very quick and easy to whip up. I did need to cook mine for 45mins.
