  • 180 grams golden syrup
  • 125 grams Butter
  • 340 grams Self Raising Flour
  • 125 grams castor sugar
  • 45 grams Coconut shredded or desiccated
  • 2 eggs
  • 255 grams Milk

Icing:

  • 485 grams icing sugar
  • 120 grams Butter
  • 1 teaspoon honey
  • 1 teaspoon vanilla extract
  • 1 tablespoon hot water

Recipe's preparation

    Method:
  1. # Pre-heat oven to 180 degrees - grease and line cake tin 20 x 30 cm.

    # Place Golden Syrup & butter in bowl - MC on - 6 min - 90 degrees - Speed Gentle stir setting"Gentle stir setting"  

    # Add Self Raising Flour, Castor Sugar, Coconut- MC on - 10 sec - Speed 5.

    # Add Eggs & Milk - MC on - 10 sec - Speed 5.

    # Scrape down sides - MC on - 5 sec - Speed 5.

    # Pour into greased and lined cake tin.

    # Bake in oven 180 degrees - 40 mins - test centre with cake skewer When it comes out clean it's done.

    # Let the cake cool before you apply the icing.

  2. Icing:
  3. # Ensure mixing bowl is clean and dry from previous step.

    # Place the Icing Sugar, Butter, Honey & Vanilla Extract into bowl.

    # Slowly turn up to Speed 8 and drizzle in the hot water for approximately 35 seconds- all will be combined.

    # Place onto cake once it's cool - decorate with some extra Coconut if you wish.

Tip

# Due to the Golden Syrup this cake could have a tendency to burn on the top so in the last 15 minutes of cooking cover with foil to prevent this from happening.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     A very dense cake, to realy be an Anzac cake needs to have some oats incorperated, otherwise a nice cake
