Ingredients

  • 100 grams pitted dates
  • 50 grams walnuts
  • 175 grams softened butter
  • 200 grams self-raising flour
  • 1 teaspoon cinnamon
  • 100 grams Coconut sugar
  • 2 eggs
  • 3 tablespoons honey
  • 2 Ripe Bananas, broken into pieces

Recipe's preparation

    Method
  1. 1. Pre-heat oven at 160 degrees (fan forced)

    2. Line cake pan or loaf tin (18cm bundt mould or round cake tin)

    3. Place dates (stones removed) & walnuts into bowl - lid on with MC - chop speed 8 for  5 seconds. Place into separate bowl.

    4. Put all remaining ingredients into bowl - lid on with MC - mix speed 5 for 20 seconds.

    5. Add the date/walnut mix - lid on with MC - mix speed 5 for 10 seconds.

    6. Pour into lined cake pan.

    7. Bake for 50-60 mins (until firm to touch & skewer inserted into the centre comes out clean. 

Tip

Once cool cut into pieces wrapped in gald wrap and freeze ready for quick lunch box packing.

If you want to 'hide' the dates & walnuts from the kids repeat step 3.

    Cake was delicious without sugar , I also used Nuttlex instead of butter and added 50 gms of dried cranberries...

    Great recipe, loved in our household. I didn't add any sugar and it is perfect without, due to the sweetness of the dates and the honey, thankyou for sharing.

    Used raw sugar as didn't have coconut sugar (never heard of it before). Would process dates & walnuts for 2-3 seconds as would prefer cake a little chunkier but can understand processing longer for children. Lovely moist cake, would definately make it again. Thanks for sharing recipe.

    Have made this twice now, and it is delicious. Batter is so creamy I could happily eat it raw. I found it took around 1:10 to cook, as the centre was very still raw at 50 minutes. Tended to crumble a bit when cutting, but we all enjoyed it. Thanks for the recipe, will be making it regularly.

    Scrumptious!

    I didn't have coconut sugar so used raw instead.  Also, I followed JeffnJulie's advice and reduced the processing time for the dates and walnuts, love the different textures. Made this in my TM31. Thanks for the wonderful recipe.

    Lovely moist tasty cake.  I made it in bundt mould and it only took about 40 minutes to cook.  I may process the dates and walnut a little less next time.  Not sure if I was meant to however I used reverse in steps 4 and 5 which seemed to work well. Thank you for this very nice cake recipe.
