Ingredients

Muffin mix

  • 1 green apple
  • 80 gram Butter
  • 1 teaspoon cinnamon
  • 35 gram rolled oats
  • 280 gram Self Raising Flour
  • 2 eggs
  • 200 gram natural yogurt
  • 2 bananas, mashed
  • 55 gram honey
  • 100 gram fresh/frozen berries, (or to taste)

Recipe's preparation

  1. Pre-heat oven (190 degress/170 degrees for fan forced)


    Peel apple and chop into quarters.  Place in TM bowl and grate 4 seconds, speed 4.  Scrap out of bowl and set aside.


    Rinse bowl and dry well.


    Place butter into TM bowl and melt; 70 degrees; 1 minute, 30 seconds; speed 1.


    Add cinnamon, rolled oats, SR flour, eggs, yoghurt, mashed banana, honey and grated apple to the TM bowl.


    Mix, counter-clockwise operation, 30-45 seconds, speed 2. Scrap down sides of bowl and repeat in required for 10-15 seconds.


    Add berries and mix, counter-clockwise operation, 5-10 seconds, speed 2.


    Place mixture into paper cases in a muffin pan (should fill 12 1/3 cup sized muffin pans).


    Sprinkle extra rolled oats onto the muffin mix (approx 2 tablespoons in total)


    Place muffin tray in pre-heated oven and bake for 20-25 minutes. Test with a skewer; if it comes out clean the muffins are cooked. 


    Place on a cooling rack and ENJOY!

Tip

If you like things really sweet, either add extra honey OR extra berries!  Enjoy!

    Lovely flavour but these stuck to my paper cases very badly! Lost half of the muffin stuck to the paper, what have I done wrong? Wouldn't make again due to this. Also had to adjust times and speeds to grate the Apple and mix the batter.

    Very nice but more frozen raspberries next time! Great to individually wrap and freeze.

    Great recipe, kids loved them! Next time I'll mash the banana with the apple as someone else suggested, because I'm lazy tmrc_emoticons.;-) I made dairy free by using nuttelex and they were tasty and nice texture!

    Thank you. Loved the ingredients list. I found I had to change the instructions slightly to use higher speeds (my peeled & quartered apple didn't grate at spd 4 - maybe it was a tough one) and the mixing speeds weren't enough to properly combine my ingredients due to the thickness of the batter. Also wish I'd mashed my banana in TM after the apple to save doing it by hand. 12 decent sized muffins! Enjoyed the flavour. Thank you tmrc_emoticons.)

    I didn't worry about peeling the apple and I mashed the banana in the TM when I added it in with the other ingredients. Thanks!
