Ingredients

Banana Bread

  • 4 Large Overripe Bananas
  • 220 gram gluten free flour, see my GF flour recipe
  • 130 g Unsalted butter, softened, or coconut oil
  • 150 g coconut sugar to taste, or rapadura sugar
  • 2 tsp baking powder
  • 1 tsp Guar Gum
  • 1 tsp Bi-carb soda
  • 100 g coconut milk, or buttermilk or oat milk
  • 2 tsp vanilla extract
  • 1 pinch sea salt
  • 2 eggs

Recipe's preparation

    method
  1. preheat oven to 180°c and grease loaf tin

    Place peeled bananas in mixing bowl and mash 5sec/sp6

    add butter/coconut oil and sugar and mix 20sec/sp4

    Scrape down sides and add eggs, mix 10sec/sp4

    Add all remaining ingredients and mix 20sec/sp4

    Pour into loaf tin and bake 40 minutes. Test with skewer, if it's still sticky then bake for another 10-20 minutes until skewer comes out clean.

    Let cool for at least 30 minutes before removing loaf from tin

    We love this banana bread, we reduce sugar to 80g and use White Wings GF flour, love it toasted for breakfast. Smile
