Chocolate & Date Torte
- 6 egg whites
- 220 g caster sugar (1 cup)
- 150 g dark chocolate metled
- 1/4 cup plain flour (sifted)
- 200 g fresh dates,pittted & chopped
- Cocoa fro dusting

Place egg whites in TM and prepare as per EDC page 11, until peaks form
Gradually add the caster sugar one tablespoon at at time via the hole in the TM lid
Once all sugar is added scrape down the sides of the bowl, whip a further 3 min or unitl glossy
Add the melted chocolate, flour & dates until all combined (no need for the butterfly)
spoon into lightly grreased springform pan lined with baking paper
Bake 50-55 min in a 180o oven until outside is crisp. dust with cocoa !
Serve hot or cold with icecream or strawberry sauce out of the EDC page 160

I think I only baked this for 40 minutes, will double check on that when I bake it next. So delicious it was devoured in one sitting by 5 adults and 3 children. Not too chocolate-y or ritch, just perfect!
