Ingredients

Coffee & Hazelnut Horseshoe

  • 110 gms Raw Sugar
  • 60 gms Hazelnuts
  • 185 gms Plain Flour
  • 125 gms Cold Butter Cubed
  • 1 egg yolk
  • 2 tsp of Instant Coffee, Mixed in a cup with hot water
  • 2 tsp Hot Water

Recipe's preparation

    Coffee & Hazelnut Horseshoe Biscuits
  1. 1. Make the Caster Sugar!

    Weigh in 110gms raw Sugar, 5 sec, speed7. Repeat to achieve your desired granular texture.

    Remove from bowl & set aside.

     

  2. 2. Weigh in 60gms of Hazelnuts, mill for 10 sec, speed 10.

    Remove from bowl & set aside.

     

  3. 3. Weigh in 185gms of Plain Flour, 40gms of the reserved Caster Sugar & 125gms of the Cold Butter Cubed.

    Closed lid"Closed lid" Turbo 1 sec bursts 2-3 times till butter is a rubbed in texture with the flour.

     

  4. 4. Add in reserved milled Hazelnuts, egg yolk & combined instant coffee & hot water to the bowl.

    Mix for 15 sec, speed 5. Scrape down sides and repeat 15 sec, speed 5.

     

  5. 5. Roll heaped tsp amounts into a ball and roll into 5cm lengths, then shape into horseshoes.

     

  6. 6. Bake in moderate oven of 180 degrees for 8-10 minutes or until slightly golden.

    Once baked, remove tray from oven, let stand for 5  mins before gently rolling into the remainding reserved  a Caster Sugar, then cool on wire racks

     

Tip

EGG FREE: Omit the Egg & just add an extra 20 gms of butter.

 

Instead of Hazelnuts, other nuts can be substituted like Brazil Nuts, Almonds & Walnuts.

 

Also, instead of coffee & water, you can add your favourite liquor like, Frangelico orTia Maria....just for an example!

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
