- 2 pieces EDC shortcrust pastry, page 129
- 400-450 g Steamed Pumpkin
- 6 eggs
- 1 can evaporated milk
- 80 g sugar, white, raw or brown
- 10 g Maple syrup
- 2 tsp ground mixed spice
- 10 g cornflour

I'm cooking this todayRecipe's preparation
1. Steam pumpkin in your Varoma until soft (500g water, 20 minutes/ Varoma/ speed 2), allow to cool
2. Preheat oven to 170°C
3. Grease and line 2 pie dishes with your shortcrust pastry
4. Add remaining ingredients into your Thermomix and mix for 20 seconds/ speed 6
5. Pour pumpkin mixture into prepared dishes and bake for 35 minutes or until light brown and set
Serve warm or cold with whipped cream

I used gf puff pastry from the shop & made the above filing. Only wanted 1 pie so halved everything except the pumpkin. Very yummy. Well definitely make again. Family loved it.
