Ingredients
Cake Mix
- 180 grams Butter, chopped
- 2 teaspoon lemon rind, grated
- 140 grams raw sugar, blitzed to castor form
- 3 Eggs.
- 130 grams S R Flour
- 65 grams plain flour
- 75 grams Milk
TOPPING
- 5 granny smith apples, Peeled and sliced - about 16 slices per apple
- 120 grams brown sugar
- 2 heaped teaspoon cinnamon

Blitz the raw sugar to make castor sugar for 2 seconds on speed 9.
Place the Butter and sugar into mixing bowl and beat 1 min 37 degrees on speed four. Scrape down sides of bowl and repeat if necessary.
Add all remaining ingredients and beat for 30 seconds taking your time to get to a speed of 7. (it should be a rather stiff mixture so that the apple will hold on top.)
Scrape batter into prepared tin.
Peel, core and 1/4 the apples slicing into rounded sides to get approx 16 slices per apple. Place the apple into the cake mix with the rounded sides up - not laying flat. spinkle the combined brown sugar and cinnamon over the apple evenly.
Preheat the oven to 180 degrees and line a 23 x 23 cm square tin.
Tip
The cake mixture will be rather stiff so that the apple will hold into place. You can also add more sugar to the cake mix althought with the added on top it can be quite sweet.

Made this today and it was enjoyed by everyone. Next time I make it though I will halve the amount of brown sugar and cinnamon on the top as it was far too thick.
It could be made as a dessert served with custard also. Thanks for sharing.

Needed a good hour to bake Carol. My daughter & mother baked this first with white SR flour & 1/2 the sugar topping. Was almost like a Madira cake & nice. When she came home to bake another we have wholemeal flour & she mixed up the full amount to sprinkle. Result was quite different. A very moist texture with a deep golden color. Both cakes were lovely but not so much sugar is needed on the top...takes longer to cook too!
