Ingredients
mock cream
- 80 g shortening, softened and cubed, (I use copha)
- 4 tablespoon sugar
- 1 teaspoon vanilla extract or paste
- 1 tablespoon Boiling water
- 3 tablespoon Milk, (more if necessary)

Mill sugar 8 sec sp 10, until icing sugar consistency.
Insert Butterfly. Add Shortening and Vanilla Extract. Mix 30 sec sp 3.
Slowly add water and milk, whipping until you get a really thick, smooth and combined mix.
spoon or pipe into cream buns, finger buns for jam donuts, or on top of your favourite cake.
Easy Mock Cream
Tip
I use copha, as it really does give the mock cream that very white glossy taste and texture, however and form of shortening would be suitable.

Disaster here too - I can't believe it would ever work if you didnt heat the Copha first. Will try that next time.
This recipe worked a treat.. I've tried other mock cream recipes & ended up with a separated mess.. I'll be saving this one..
My issue was was hard to get the cream out of the Thermi.
Irish69: Did you put your whisk in properly?
Do you have the recipe for the buns?
How long and at what speed do you whip it for? Mine was definitely not thick enough to be piped. Could my copha be too warm?
I made this in the TM5, blitzed the Copha up and heated to 37 degrees for about 2 minutes, then added icing sugar and liquids. Once you get the copha warmed up it whips well, otherwise it sticks high on the bowl out of reach of the butterfly.
Disaster- not sure where I went wrong- but nearly destroyed my butterfly whisk in the process!
