I made these with gluten free flour for the first time last weekend and they were great.  I used the flour blend from "Me and My Thermi".  They were light fluffy and tasted great.  I even ate the cold leftovers in the evening with butter and jam.  I have tried a few gluten free pancake mixes and they were awful, so really glad that this recipe works with the GF flour blend. I also only had small eggs so I used 2.

Great recipe. We had to make it with lactose free milk (didnt add the lemon juice) and nuttelex and they were still really yummy. Better consistency than others weve tried.
