Ingredients

  • --- 2 cups almond meal, can grind almonds in thermomix in need.
  • 1/3 cup rapadura sugar
  • 1/3 cup cacao
  • 2 tablespoons chia seeds
  • 80gms almond/rice pulp, leftover from making the rice/almond milk in thermomix
  • 1 tablespoon baking powder
  • 100gms coconut oil
  • 50gms butter
  • 3 eggs
  • 2/3 cup rice/almond milk
  • 1 ripe banana

Recipe's preparation

    Method
  1. Line 24 cupcake tray with papers.
    Heat oven to 180C.


    Add dry ingredients to thermomix bowl and mix for 5 seconds on speed 4.
    Add oil, butter, rice milk, eggs and banana and mix for 5-10 seconds on speed 4.
    Pour into cupcake cases and bake at 180C for 12-13 mins.
    Cool on a wire rack and then ice with chocolate ganache or thermomix hazelnut chocolate spread.


    Chocolate ganache as per EDC
    100gms dark chocolate
    80gms cream
    Grate 5 seconds speed 8. Add cream and cook for 2 mins at 50C on speed 3.
