Ingredients
MUFFIN MIXTURE
- 100 g Wheat Grain (or Wholemeal Flour)
- 1 lemon, zest only
- 150 g unsalted butter
- 100 g caster sugar
- 2 eggs
- 1 lemon, juice of
- 200 g natural yoghurt
- 200 g plain flour
- 1 teaspoon baking flour
- 1 teaspoon poppyseeds (optional)
LEMON CURD
- 200 g unsalted butter
- 250 g castor sugar
- 3 eggs
- 1 egg yolk
- 4 lemons, juice only
- 20 g Corn Flour

Add all ingredients to the TM Bowl, cook 90 degrees / 7 mins / speed 4
Set aside to cool
Preheat oven 175 degrees
Add wheat grain to TM bowl & mill 30seconds / speed 9 - set aside
without cleaning bowl
Add Lemon Peel to TM Bowl & zest 30 seconds / speed 9 until fine (you may need to scrape & repeat) then
Add Butter & Caster Sugar to TM bowl & cream 1 Minute / Speed 4
Add ALL remaining ingredients + milled wheat grain & mix 30 seconds / reverse / speed 4 until just combined
Half fill muffin tray or cupcake liners with batter, then a tablespoon of lemon curd then top with another tablespoon of batter - repeat
Bake in a preheated oven 175 degrees for 20-25 minutes or until golden
Shake sifted icing sugar on top when taken out of the oven.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. I made these last night for our Op Shop ladies, unfortunately they won't make it there. I was hesitant about the plain flour as much as it also had baking powder in recipe. These are very stodgy and heavy. However the lemon curd is lovely. Hubby's birthday today so think they will be OK with custard. So that's sweets organised. Lol My trusty old shortbread is now in the oven.
