Ingredients
Biscuit base
- 180 g unsalted butter
- 60 g icing sugar or milled raw sugar
- 60 g custard powder
- 1 teaspoon baking powder
- 180 g plain flour
Buttercream
- 100 g Butter
- 1 teaspoon vanilla extract
- 1 cup icing sugar (or milled raw sugar)

Preheat oven to 180 degrees and line two trays with baking powder.
Put butter in TM, 30 seconds, speed 5 until creamy
Add icing sugar and custard powder, 20 sec, speed 6 until combined
Add the baking powder and flour and mix until combined on speed 5 or 6.Roll dough into balls, about 1 teaspoon of mixture per ball.
Place on baking paper and press each ball with a fork to leave the 'melting moment' indentBake for about 12 - 14 minutes or until light golden, stand for 5 minutes before transferring to wire cooling rack
Combine butter and vanilla until smooth and creamy, 30 seconds speed 5
Add icing sugar and beat until mixture forms a paste, which will be the same consistancy of thick icing.
Spoon into a piping bag with a star nozzle and pipe onto half of the biscuits. I also add some strawberry jam to the biscuit, but you can also use passionfruit etc..
Gently press one of each biscuit together to form a melting moment
Dust with icing sugar before serving and enjoy!!

These were super easy. I was sceptical as to what that the icing would be like as I like the traditional with custard powder but it worked with these biscuits. Would definitely make again.
I have made these twice now and they were delicious both times. I added a passionfruit to the buttercream in one batch for something different, yum!
However next time I will make them in my mix master or even with hand held beaters as I found it fiddley with the thermie cause the butter went straight to the bottom and sides and I had to keep scraping the sides. Even tried with the butterfly which was a bit better, but still needed to scrape down a few times.
These were a real crowd pleaser, they disappeared within moments!
