Ingredients

Base

  • 2 Cups Self Raising Flour
  • 2 Cups Brown Sugar
  • 130 g softened butter

Cake

  • 1 cup warm milk
  • 1 egg
  • 1 teaspoon bicarb soda
  • 2 teaspoon Nutmeg
  • 1/2 cup crushed walnuts

Recipe's preparation

    Base
  1. Preheat oven to 180 degrees celcuis.
    Grease and line small slice tin with baking paper
    Combine flour, sugar and butter and mix on speed 5 until mixture resembles breadcrumbs.
    Put just less under half of this mix into the tin and press down. This will form the base of the slice, and will be about 3 - 4 mm thick
    Set the rest of the mixture aside (this will be combined with the cake part)

  3. Put milk and bicarb into TM bowl, 10 seconds, speed 5.
    Add egg and nutmeg 15 seconds, speed 5


    Pour this into remaining 'breadcrumb' mixture and combine.


    The mixture will seem quite runny.


    Pour into the slice tin.


    Sprinkle the crushed walnuts over the top and bake in a moderate oven for 45 minutes of until skewer comes out clean.


    Let cool in tin for 10 minutes and then remove to cool completly. I find it easier to cut into slices while it is still a little warm.

    Couldn't believe how well this turned out, and it tastes even better a few days after baking it. Can't wait to cook it again. Think I could change the flour to almond flour and the sugar to some dates. Will try again with that for a healthier option

    This is seriously a good cake. I did however tweek it a little because I love walnuts. I cut down the sugar and flour to 1 1/2 cups each but added I cup walnuts that I ground in the Thermomix at the start.  These walnuts became part of the initial mixture. I then followed  the recipe as written only adding a sprinkling of nutmeg as it is a very strong spice. Thank you so much for posting. I am of Armenian decent and am so happy to now have an Armenian recipe.  tmrc_emoticons.) tmrc_emoticons.)

    note to me: cut the milk down to 1/2 cup and add I cup mashed bananas And use 1 1/4 cup brown sugar.
