  • 125 grams Self Raising Flour
  • 125 grams sugar
  • 125 grams Butter
  • 2 eggs
  • 2 tablespoons Milk
  • 1 teaspoon baking powder
  • 2 passionfruit, Pulp

Frosting

  • 2 tablespoons Butter
  • 250 gram icing sugar
  • 2 passionfruit, Pulp

Recipe's preparation

    Cupcakes
  1.  

    1. Place all ingredients (except passionfruit) into Closed lid"Closed lid"  bowl. Mix Speed 4 for 5 seconds. Scrape down side and then mix again 5 seconds. Add passionfruit, using Counter-clockwise operation"Counter-clockwise operation"  and speed 3, mix for 10 seconds.
  2. Frosting
    1. Mix all frosting ingredients in a bowl until smooth.
    2. Frost cupcakes with icing when totally cooled.

    After reading the comments, I doubled the mixture (but not the sugar) as well.
    I didn't double the icing but foudn that it was quite a stiff consitancy and that I had a little trouble gettting it onthe cupcake without breaking it.

    They were a little rustic looking. But very easy, tasty and a big hit witht he family!!

    I made these tonight. They were really easy and very yummy.

    I made double the mixture to make a larger cupcake (made 12), however I didn't double the sugar and left it at 125gms. I also didn't double the icing as there was plenty and it was a firm consistency.

    The only issue I had was after they finished cooking the cupcake paper was very greasy on the bottom. Apparently this can happen when using cupcake papers and "google" suggests putting uncooked rice in the cupcake cavity (so it covers the whole space) before putting your paper in, to absorb the butter during cooking. I'll try that next time.

    WARNING: Follow the recipe & don’t substitute tinned passion fruit pulp - it doesn’t work! I am determined to try this again & get much better results. I’m sure it deserves 4-5 stars but i’ll rate after I try again.

    Lovely recipe. Thanks to the person who put the time and oven temp in the comments. Also, these are small cupcakes, I recommend to double the recipe.

    These were so amazing (even without frosting) but will double the recipe next time as I like my cupcakes big tmrc_emoticons.)

    Delicious recipe. Reduced the sugar in the batter. Also doubled the recipe. Used only one passionfruit in each section as the ones I had were huge and full of pulp. Icing was still runny but set after a few hours.

    Great recipe! Thanks. I only used a small amount of sugar and they were still delicious. baked at 160 deg, fan forced for approx 15-20mins.
