Ingredients
Sweet Shortcrust Pastry
- 2 batches EDC Shortcrust pastry or a few sheets ready-made
Passionfruit Custard
- 1 tablespoon cornflour
- 120 grams passionfruit pulp (approx 6 passionfruit), *approx
- 160 grams sugar (I use caster)
- 380 grams milk (I use full cream)
- 3 --- egg yolks

Prepare a double batch of EDC Sweet Shortcrust Pastry or defrost a few sheets of ready-made Sweet Shortcrust Pastry
If using home-made pastry, simply break pieces off and use fingers to press/shape into greased tart tins or muffin tins - no need to roll. Otherwise if using pastry sheets, use cutter to cut rounds and press into tin. Place in fridge for approx 10 mins while heating oven to 180 degrees celcius.
Blind bake pastry for 10 minutes or until lightly golden (I use muffin cases weighted down with baking beans)!
While pastry is baking, proceed to custard.
Add all ingredients into TM bowl and cook for 7 mins on 90 degrees, speed 4.
Pour into pastry cases and place into the oven for approx 12 minutes, until bubbling rapidly and thickened.
I like to dust mine with icing sugar. Best shared with family and friends! Enjoy!

This was a total flop. Too sweet and custard did not set. Disappointing
These were delicious but I agree - visually unappealing.
My custard bubbled over sides of pastry making them sticky and the pastry a bit soggy.
YUM Yum Yum. I Made two and the second I add banana which was delicious.
Passionfruit custard flavour was good, but mine totally sunk to 1-2mm thick. Not visually appealing at all. I poured more filling in and baked for longer and it still sunk. I have no idea what I did wrong.
