Ingredients

  • 50 grams Butter, Softened
  • 120 grams raw sugar
  • 3 eggs
  • 150 grams plain yoghurt
  • 225 grams pineapple pieces, Drained
  • 270 grams plain flour
  • 50 grams Coconut Flour
  • 1 level teaspoon baking powder
  • 100 grams Coconut, Desiccated

Recipe's preparation

    Prepare a muffin tin with 12 muffin baking papers. Preheat oven to 180 degrees.
  1. Place sugar into bowl. Mill 3 secs/speed 9.

  2. Place softened butter into bowl. Mix 15 seconds/speed 5. Scrape down sides of bowl.

  3. Add eggs, yoghurt and pineapple pieces. Mix 10 secs/counter-clockwise operation/speed 3.

  4. Add flours and baking powder and mix 15secs/counter-clockwise operation/speed5

  5. Pour into prepared muffin tin.

Tip

I sprayed the papers with a bit of coconut oil.

If you would like a citrus zing add zest of 1 lime to the yoghurt step.

If you would like to use self raising flour replace the plain flour and baking powder.

If you don't want to use coconut flour, omit it and 1 egg.

You can add more pineapple if you'd like to.
