Ingredients
Scottish Malt Loaf
- 300 g Dried Fruit, ie Sultanas, Currants & Raisins
- 300 g Hot Strong Black Tea
- 300 g Dark Muscovado Sugar
- 3 tablespoon Malt Extract
- 2 Medium Sized Eggs
- 400 g Self Raising Flour
- 2 teaspoons Chinese Five Spice, (or Mixed spice)

Preheat oven to 170 C and grease a large loaf tin with butter and dust with flour, tipping out excess.
Place dried fruit in TM bowl, add the hot tea, sugar & malt extract.
Set TM to 70 degrees, Speed 1 for 5 minutes, Reverse "Counter-clockwise operation"
Ensure all sugar is dissolved & allow to cool to room temp (37 degrees on TM display)
Add Five Spice, Flour & Eggs.
Mix on Speed 3-4 for 40 Seconds, reverse "Counter-clockwise operation"
Pour mixture into prepared tin & bake in oven until cooked.
Original recipe stated 1 1/2 hours, but in my oven it was starting to burn after 40 minutes so keep a close eye.
Check to see if it is cooked by using a skewer / sharp knife.
Once cooked, remove from the oven & cool in the tin.
Glaze whilst still warm with a little more malt extract.
Wrap & store in foil / baking paper & it will develop it's stickyness becoming more delicious.

This is the first time I have used Malt extract, please let me know if you have an easy way of dealing with this delicious, sticky & messy stuff!!!

my Mum made this and i loved so now i am attempting to make
Sounds good, and I'll make this week. Treat malt as you would golden syrup and heat the spoon first so that it comes off easily.
