Ingredients

Custard

  • zest of 1 lemon
  • 60g sugar
  • 30g cornflour
  • 2 eggs
  • 500g Milk

Streusel Mix

  • 175g Butter
  • 150g sugar
  • 300g Flour, Plain
  • 1 tsp Vanilla Paste

900g Plums

  • Ceylon Cinnamon, Optional

Recipe's preparation

    Custard
  1. Place lemon zest, sugar and cornflour into mixing bowl and mill
    10 sec/ speed 9. Scrape down sides of bowl.


    Add eggs and milk and cook 7 min/ 90*C/ speed 4


    Pour into wide bowl to cool, sprinkle with a bit of sugar to avoid a skin forming.

  2. Streusel Mix
  3. Preheat oven to 200*C.


    Grease a 26cm round spring form or line with baking paper.


    Melt butter in TM bowl 4min/ 60*C/ speed 1,


    let cool for a minute or so. 


    Add sugar, flour and vanilla paste, mix 5 sec/ speed 3 or 4 until you have a texture like breadcrumbs. 


    Press 2/3 of the streusel mix into cake tin to form the base, pushing it up the side a bit.


    Spread custard On base.


    Cut plums in half (or quarters if they are big), remove the stone and place them cut-side up on to custard.


    If you would like to use cinnamon, now is the time to sprinkle it over the plums.


    Press and rub the leftover streusel mix between your fingers and cover the plums with the streusel. Smaller and larger lumps look good!


    Bake for approx 40 minutes until streusel top looks golden and cake is cooked through.

Tip

Variation: Try with cherries and chocolate custard; cocoa powder and speculaas spices can be added to the streusel mix for this.

    Delicious!
    I forgot to melt the butter before adding the sugar and flour, and it still worked perfectly. I ended up using the Turbo setting to quickly cut up the plums into smaller bits since my kids aren't keen on plums, and it turned out great! Everyone gobbled it up and asked for seconds! The custard is a great addition to this cake, and I'm sure it would be good with any type of fruit. Will make again! Thanks for the recipe!

    Yes, I made it twice already this year, and it does depend on the ripeness of the plums and also on the variety I suppose. This year I was given loads of very tart ones, as dark as they come. Great colours, great contrast in flavours and textures!

    Very tasty!   Think next time I'll nuke my plums just a little so they soften up a bit more before i put them on the custard.  Could just be they weren't quite ripe enough. ..will definitely make again with some other flavor combos ...delicious thankyou
