Ingredients
Muffin Mixture
- 240 grams overripe pear, (Approx 1 large Pear)
- 95 grams Butter
- 1 egg
- 190 grams Milk
- 280 grams Self Raising Flour
- 2 teaspoons baking powder
- 45 grams honey
- 110 grams brown sugar
- 1 teaspoon ground cinnamon
- 1 teaspoon Vanilla Paste
- 200 grams Frozen Blueberries
Crumble Topping
- 40 grams brown sugar
- 50 grams Self Raising Flour
- 2 tablespoons Butter

Place sugar, flour and cinnamon into TM bowl 5 sec / speed 4
Leave the M/C off 1 min / speed 2.5
Add butter through the lid while it is turning
The butter will crumble and the mixture will resemble bread crumbs
Transfer to separate bowl
Pre-Heat oven to 180 degrees fan forced
Add pear to TM bowl (no need to wash) 4 sec / speed 4
Transfer pear to separate bowl
Add butter to bowl (no need to clean TM) 1 min 30 sec / 60 deg / speed 1
Add eggs and milk 6 sec / speed 4
Add flour, baking powder, honey, sugar, cinnamon and vanilla paste 10 sec / speed 4
Add reserved pear 20 sec / "Counter-clockwise operation" speed 3.5
Spoon into 20 small muffin cases / tray and top with blueberries and reserved crumble
Bake in oven for 25 mins or until golden brown and skewer comes out clean

Tip
Pear MUST be overripe...otherwise it will need cooking to soften.

Lovely recipe. I forgot the sugar in the batter but with the pear, honey and crumble topping, they are sweet enough. However, I think I would reduce the amount of baking powder next time as I could taste it.
Worked out prefect, we just used pears tho. No blueberries!

Love, love, love this recipe. The honey floavour of the batter is beautiful and they are super moist like the heading suggests. Only thing I did different was to hand chop the pear as I wanted large chunks
