Ingredients
The Best Chocolate Cake
- 250 gram Butter
- 20 grams Coffee, either instant or a shot of coffee
- 360 grams hot water
- 180 grams Dark cooking chocolate, I use 45%
- 320 grams caster sugar
- 260 grams self-raising flour
- 20 grams cocoa powder
- 2 eggs
- 2 teaspoons vanilla essence
- 1 heaped teaspoon icing sugar, for decorating

- 1. Melt butter for 3 min / 80 deg / speed 1
- 2. Add coffee and hot water and stir 30 sec / speed 2
- Break chocolate into pieces, add chocolate and sugar to the bowl. Melt 4 min / 80 deg / speed 1.5
- Add self-raising flour, cocoa, eggs and vanilla essence. Mix 20 sec / speed 3.5
- Pour into springform pan. Mixture will be very runny. Slow cook in low oven 160 degrees for 70-90 mins, or until cake bounces back when you press it and skewer comes out clean.
- Allow cake to cool and sprinkle icing sugar on top. Serve with cream or ice cream.
Tip
This cake is so delicious - it's like a big brownie cake with crispy edges and moist on the inside!
Keep covered and lasts a few days. Definitely heat in microwave if it's still being enjoyed after a few days!

Great recipe fresh from the oven, had a delicious "crust".best served with icecream or cream rather than frosting. I used 1/3 of the mixture to make cupcakes, so they would be ready faster! Despite lining my spingform cake tin the mixture was still escaping, I had to work quickly! Thanks for creating and sharing this recipe.
